I first heard about Wafels and Dinges on Throwdown with Bobby Flay.

IMG_9876The liege wafel is a yeast based dough, it is soft and chewy on the inside and a little crisp on the outside, not what you typically think of when you think “Belgian waffle”.  The man on the truck makes ours hot and fresh (you can see the pre rolled balls of dough on top of the oven).

IMG_9875I have my mini wafel with speculoos – “cookie butter” that tastes a little like a cross between a  graham cracker and a gingerbread cookie.

We also try one with strawberries and whipped cream. YUM!
